Farmers Market Salad

Maggiano's Little Italy Recipe

6 oz mixed greens
2 oz fresh mozzarella, broken into 1” pieces
1 tablespoon red onion
2 tablespoons snap peas
2 tablespoons green beans,cooked and chilled
2 tablespoons yellow bell peppers
10 grape tomatoes
3 tablespoons cucumber,peeled & seeded,diced
6 tablespoons roasted garlic vinaigrette

Roasted Garlic Vinaigrette:
1 tablespoon roasted garlic
6 tablespoons olive oil
1 tablespoon honey
2 tablespoons apple cider vinegar
1/2 tablespoon Dijon mustard
1/2 tablespoon lemon juice

Dressing: Process ingredeints in a blender and blend until creamy. Pour into salad and toss. Serve immediately.
