Tuscan Mussels

Maggiano's Little Italy Recipe

20 mussels, cleaned and removed of beards
2 tablespoons cannelini beans
1/2 tablespoon fresh chopped parsley
1/2 cup white wine
1/2 tablespoon fresh chopped basil
1/2 tablespoon chopped garlic
2 tablespoons butter
3/4 cup chicken broth
1 1/2 tablespoons sun dried tomatoes
juice of 1/2 a lemon

In a saute pan, heat the mussels, wine and garlic. Cover pan and cook over high heat until mussels open. Add remaining ingredients to pan and bring to a simmer briefly. Remove from heat. Place in a small bowl with open shells facing upwards. Neatly garnish with two pieces of garlic toast.
