Fresh Tomato and Mozzarella Salad
TOMATO and MOZZARELLA SALAD
Maggiano's Little Italy Recipe
4 oz fresh mozzarella ovaline (12 ea)
3 oz cherry tomatoes, halved
1 oz red onion, thinly sliced
3 each pepperoncini, sliced lengthwise
1 tablespoon basil, roughly chopped
1 tablespoon parsley, roughly chopped
2 tablespoons extra virgin olive oil
1 teaspoon salt
8 each, crostini, freshly toasted
1 teaspoon fresh ground black pepper
Place all items in a small mixing bowl. Lightly, fold all items together until fully incorporated. (Be careful not to break the tomatoes or mozzarella). Garnish with fresh ground black pepper. Serve with toasted baguette.
